This year I am cooking up a vegan Christmas spread for my family, and I am so excited about it!
This is my third vegan Christmas, and my first one ever being in charge of the Christmas menu and execution. My family isn’t vegan, so I’m especially appreciative that they’re trusting their Christmas food in my novice chef hands. I don’t entirely know what I have gotten myself into…but I cannot wait to rise to the challenge, and to share these delicious recipes with my family!

Last Christmas a family from my church cooked up this nut roast for me. It uses simple ingredients, and results in delicious flavour. I would definitely recommend it for any holiday table!
This past Thanksgiving I went over to a dear friend’s house and she made these incredible Wellingtons for us. They turned out so good, so I definitely want to make these for my family at some point – maybe Christmas Eve, or Boxing Day?
Ever since trying my first mince pie six years ago, Christmas doesn’t feel quite complete without mince pies. Last year I made these very easy and super tasty mince pies using gluten-free puff pastry, filling it with store bought mince pie filling (I like Meridian’s), and then topping it with little strips of pastry to create a pie-like topping. Just pop into the oven for about 15-20mins at 200C, until golden brown.
Last Christmas a friend made this pudding and brought it to Christmas lunch for us to enjoy (we were the two with special dietary requirements at the meal). It was delicious, so I’m excited to try making this myself.
My family has always been an apple pie kind of family. I think apple crisp is a bit easier to whip together than pie, so hopefully it’ll go down a treat!
