How to Make Easy Vegan Teriyaki Tofu Stir-Fry

Two ways to make easy vegan teriyaki tofu, a perfect meal prep option for dinner any night.

Raise your hand if you’re a fan of stir-fry 🙋🏻‍♀️ Stir-fry is one of my favorite go-to dinner options, especially on busy week days. It’s a great meal prep recipe, full of flavor, loaded with veggies, and uses simple ingredients you probably have in your kitchen.

There are two ways you could make this recipe – one is fairly easy, and the other is even easier. That’s how I like to cook! I’ll go through both ways.

Teriyaki Tofu: The Fairly Easy Way

The fairly easy way to make teriyaki tofu involves preparing your own tofu. Don’t be daunted, it’s actually a pretty simple process. It just takes a bit of time, and some advanced thought and preparation. That’s because for this recipe, I recommend pressing your tofu. I love using Tofuture’s tofu press. It’s very easy to use and quite effective.

After pressing your tofu for a few hours, chop it up into slices, and coat each one in cornstarch. Then fry each piece up on a pan with oil (I like avocado and olive oil). I try to fry each side of every piece of tofu, which is why it can be a bit of a painstaking process. But it’s worth it to get those crispy pieces of golden goodness!

Teriyaki Tofu: The Even Easier Way

If you don’t want to have to prepare the tofu yourself, an even easier solution for this recipe is to buy pre-prepared tofu! I love Nasoya’s Plantspired Teriyaki Tofu. It’s perfect for this recipe, as the tofu is already teriyaki flavored to begin with, and it doesn’t need to be pressed or anything. Just grab a packet, slice the tofu into pieces, and fry it up on a pan. Voila! Tofu, ready to go.

Making the Sauce

This recipe is all about the sauce. You can customize this in a lot of ways to fit your own preferences. A good starting point, and what I do for my own sauce, is to use tamari sauce (which is just gluten-free soy sauce), water, corn starch (to help thicken up the sauce), maple syrup for sweetness, and garlic and ginger for extra flavor. I like to use fresh garlic and ginger when I can, but if I don’t have them on hand I’ll opt for the powder form and it works just fine.

Vegan Teriyaki Tofu

Servings 4

Ingredients

  • 2 blocks firm tofu OR Nasoya's Plantspired TofuBaked Teriyaki
  • Oil to fry⁣
  • Corn starch for coating the tofu
  • ⁣1/4 cup tamari or soy sauce⁣
  • 1/2 cup water
  • ⁣1 tbsp corn starch⁣
  • 5 tbsp maple syrup⁣
  • 2 cloves garlic⁣
  • 1 tsp ground ginger
  • 1 pack frozen stir-fry veggies
  • Served over rice with roasted sesame seeds on top⁣

Instructions

  1. Press the tofu to remove excess moisture, then chop into cubes or tear into pieces. If using Nasoya’s pre-made teriyaki tofu, skip this step. Toss each tofu piece in corn starch, and then fry them up on a pan, getting every side so it’s crispy all around. Remove the tofu pieces from the pan and set aside.
  2. Using the same pan, mix the water, cornstarch, maple syrup, garlic, and ginger, and cook for a few minutes until thickened.
  3. Add frozen stir-fry veggies to the sauce and cook for 5 minutes until they’re no longer frozen.
  4. Then add the fried tofu to the pan and cook until the vegetables are tender and the tofu is well coated in the sauce.
  5. Serve over rice and sprinkle with roasted sesame seeds for added crunch and flavor.
