BANANA NUT BUTTER COOKIES

Banana Boost Butter

I first discovered Jake’s Boost Banana Boost Butter at the Allergy Free From Show this past summer. On my way out I saw a sign for ‘Banana Nut Butter’ and I honestly stopped in my tracks. And then I made a beeline for the stand – I just had to try it!

Made from ‘Creamy Argentinian peanuts, 5 seeds and freeze-dried banana in a crunchy blend’, this nut butter is unlike any I’ve ever tried before. I immediately fell in love and couldn’t wait to try experimenting and baking with it.

This nut butter works so well in these cookies, and I highly recommend giving it a try! The chunks of freeze-dried banana mixed into the blend of peanut butter, sunflower seeds, pumpkin seeds, chia seeds, linseed, and hemp seeds makes for one impressive spread. It’s a powerhouse of nutrients, high in magnesium and potassium, and honestly soo tasty!

If you don’t have access to this particular nut butter, the recipe works perfectly well with peanut butter, or your nut/seed butter of choice!

 

 

Banana Nut Butter Cookies

This recipe comes together quickly and easily. Just dump all the ingredients into a bowl, mix together (mixing the nut butter into the batter can be a bit of an arm workout, but I promise it’s worth it), form into cookie shapes, and let the oven work its baking magic.

I will note that the batter is quite sticky and can get messy. Personally, I don’t mind getting my (clean!) hands dirty, and enjoying the sticky remains that don’t make it onto the baking sheet. Actually, this mixture before baking is sooo moreish (a British saying meaning it’s so good you just want to eat more). I’m amazed I didn’t eat it all before it went into the oven!

The great thing about vegan baking is that the batter is always fine to enjoy raw. Let me tell you, this one is DELICIOUS. Now that I think about it, you could easily turn these into energy balls and just freeze them to be enjoyed in the future…oh my gosh, I am totally going to try that next time.

Banana Nut Butter Cookies

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes
Servings 12 cookies

Ingredients

  • 2 ripe, medium sized bananas
  • 1/3 cup Jake’s Boost Banana Boost Butter *or other nut/seed butter of choice
  • 1.5 cups oats *use gluten-free if needed
  • 1/2 cup sultanas
  • 2 Tbsp maple syrup
  • 1 flax egg *mix together 1 tablespoons ground flax and 3 tablespoons water, let set for ~10mins

Instructions

  1. Preheat the oven to 350 F/180 C.
  2. Mash the bananas in a large bowl. Add the nut/seed butter and combine it with the banana. Add the maple syrup, flax egg, oats, and sultanas. Mix until well combined.

  3. Roll into balls and press down on a baking tray to make a cookie shape (they won’t expand much during cooking). I made 12 cookies.
  4. Bake for 10-12 minutes, or until the tops turn golden.
  5. Remove from the oven and allow to cool for a few minutes. Move to a cooling rack and allow to cool completely. Enjoy!
