Vegan Apple Pie Bars

A fun and easy autumnal recipe, these vegan apple pie bars are packed with fall flavors and full of nourishing, healthful ingredients.

Are you Team Apple or Team Pumpkin?

It’s the question of the ages that always comes up this time of year.

I actually grew up not liking pumpkin at all, but fortunately have come to appreciate pumpkin desserts so much more since becoming an adult. But I think I’ll always be firmly in the Team Apple camp.

Apple pie/crumble is my favorite dessert, so I thought I’d try to pack all the flavors of one into snack bar form.

Here are the results! These bars are great for an on-the-go snack, between meals pick-me-up, or a sweet treat anytime.

𝐀𝐩𝐩𝐥𝐞 𝐏𝐢𝐞 𝐁𝐚𝐫𝐬⁣⁣⁣

Prep Time 10 minutes
Cook Time 30 minutes

Ingredients

  • 2 tbsp flax eggs 2 tbsp ground flax, 6 tbsp water, left to sit until thickened⁣⁣⁣
  • 2 ripe bananas mashed⁣⁣⁣
  • 1 large apple chopped⁣⁣⁣
  • 2 tbsp maple syrup
  • 2 tbsp almond butter
  • 1 cup spelt flour
  • 1/2 cup rolled oats
  • As much cinnamon as you fancy⁣⁣⁣

Instructions

  1. Preheat the oven to 350F.
  2. Prepare your flax egg.

  3. Combine all ingredients in a bowl, mix well, pour into a baking dish.

  4. Bake for ~30mins or until golden brown.

  5. Let cool, cut into slices, and enjoy!⁣⁣
