How to Make Super Simple Vegan Guacamole

How I make super simple homemade vegan guacamole, using just 6 ingredients (or less!) – including the answers to some common questions about guac.

Is guacamole vegan?

Most of the time, guacamole is absolutely vegan! It’s always a good idea to check if you’re ordering out, or picking up store-bought guacamole. But the base of guacamole is avocados, and most add plant-based ingredients for extra flavor (tomatoes, onion, cilantro, etc).

Is guacamole healthy?

The healthiness of guacamole depends a lot on how it’s made, but it’s made of plant-based ingredients full of goodness! If you make your own, you have much more control to keep your guacamole healthier as well. You can use less salt if you’re watching your sodium intake. Or you can bulk up on the tomato, onion and cilantro additions if you want to lower the fat content coming from the avocados. But don’t be afraid of avocados! They’re really so good for you, full of healthy fats and nutrients. Plus, they’re just so delicious.

What do you need to make guacamole?

The way I make guac is super simple. All I use is:

  • Ripe avocados
  • Salsa ingredients – Chopped tomatoes, red onion, cilantro
  • Extra flavor – lime and salt

I often make guacamole at the same time as making salsa – usually for our almost weekly taco nights. When I do, guac is even easier. All I do is take 2-3 tablespoons of the already finished salsa, and add that to a bowl of mashed avocados. I’ll then season with extra lime and salt for added flavor (and ma really loves that lime flavor).

Can I store guacamole overnight?

You can, but guac is one of the few foods I don’t like to meal prep as it doesn’t keep the best overnight. There’s nothing wrong with eating it after a day or two in the fridge, but the top layer of guacamole will turn brown overnight. It’s not the most aesthetic, and you can always scrape off the top browned layer if wanted.

What I like to do is to prepare a single day serving of guacamole (it generally goes pretty quick anyways!). Then the next day, if we want more guacamole, for leftover taco ingredients, or just for snacking (it happens pretty often), then I’ll whip up a new batch! All it takes is mashing up 1 or 2 more avocados and then adding that leftover salsa. In a few minutes you have a freshly prepared batch of guacamole, ready to dig into.

What should I eat with guacamole?

There’s so many ways you could enjoy this delicious treat! I love eating guacamole with tortilla chips, in my tacos and on top of homemade burrito bowls. What do you eat with guacamole?

Vegan Guacamole

Ingredients

  • 2 Avocados, ripe mashed
  • 1/3 tomato chopped
  • 1/4 red onion chopped
  • 1/3 bunch of cilantro chopped
  • 1/2 lime squeezed
  • salt to taste

Instructions

  1. Open and mash the avocados

  2. Chop the tomato, onion, and cilantro (or just take 2-3 tablespoons of already made salsa using these ingredients), and add to the mashed avocado

  3. Add the juice of 1/2 a lime and salt to taste, and then everything together (but don't overmix!)

  4. Serve up and enjoy!
