Apples are one of my absolute favourite fruits. I sometimes go through periods where I eat so many that I’ll get slightly sick of them. But I always come back, because apples are just so good! I love how sweet, crunchy, and juicy they are. Plus, they make for such a convenient snack to throw in my bag for busy days out.

During my undergraduate studies, we would go apple picking every autumn. We would travel to a local orchard, wander through the trees, and pick ripe apples off the branches, snacking as we went. Of course, we always brought back a big bag of apples as well, and spent the rest of the day cooking up apple pie and apple crumble. The evening would involve settling down to watch a film and enjoy our tasty desserts.

Apple Pie Steel Cut Oats

Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes
Servings 3 servings

Ingredients

  • 1 cup steel cut oats
  • 1.5 cups plant mylk
  • 1.5 cups water
  • 3 tbsp ground flax seeds
  • 1 tbsp cinnamon
  • 1 tbsp nutmeg
  • 1 tsp ground cloves
  • 1 apple chopped
  • 1/4 cup crushed walnuts
  • Desired toppings I like extra apple slices, walnuts, coconut sprinkles, or frozen berries to mix it up

Instructions

  1. Soak steel cut oats overnight (in 2-3 cups of water); the next morning drain and rinse.

  2. Add all ingredients into a pot, or Instant Pot.
  3. Cook on the hob/stove for ~20mins or until reaches desired consistency; Set Instant Pot on Manual for 10mins.
  4. If using Instant Pot, when finished let the pressure release naturally, then open and give the cooked porridge a stir.
  5. Serve in a bowl and add whatever toppings you fancy!
