Easy Vegan Banana Bread

Ingredients

  • 1 cup mashed bananas (~3 large black bananas; have 1 extra for topping if desired)
  • 1/4 cup apple sauce
  • 1 tbsp apple cider vinegar
  • 1 flax egg (1 tbsp ground flax seed with 3 tbsp water)
  • 1 tsp vanilla extract
  • 1 cup oat flour
  • 1/4 cup date sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 1/4 cup dried fruit and/or nuts

Instructions

  1. Heat oven to 180C/375F. Prepare a flax egg by combining 1 tbsp ground flax seed with 3 tbsp water and letting it sit for ~10 minutes.

  2. Mash 3 large blackĀ peeled bananas with a fork in a bowl, then mix in the rest of the wet ingredients (apple sauce, apple cider vinegar, flax egg, and vanilla extract).
  3. In a separate bowl mix the dry ingredients (oat flour, date sugar, baking powder, baking soda, cinnamon, and nutmeg), and then add them in with the wet ingredients. Mix in theĀ dried fruit or nuts, if desired.
  4. Pour the mixture in a greased or lined loaf tin. Add a banana sliced in half to the top of the loaf, or any other toppings you want for decoration. Bake for ~45 minutes until the top is golden brown.
  5. Check to see if a skewer comes out clean, and if not bake for another 10-15 minutes as needed.
  6. Take out of the oven and allow to cool before slicing. Store in the fridge for 5-6 days, or store slices in the freezer.
